This week’s podcast features an interview with Neal Carter from Okanagan Specialty Fruits. His biotech megacorporation of eight employees has developed the Arctic Apple, a product where a gene central to the browning reaction has been essentially turned off. The result is an apple that can be cut and does not brown. Carter speaks of the advantages of the product, the challenges to commercialization, and the future outlook on marketing.
